CHEF LUIS ORTEGA

Born and raised in Mexico City, Chef Luis Ortega discovered his passion for gastronomy at the age of 15. He began his culinary journey at the Japanese restaurants Teppan Grill and Yoshimi at the Hyatt Regency Mexico City, working alongside the renowned Chef Yasuo Asai, from whom he learned the art of Japanese food and its traditional cooking.

A major milestone in his career was being part of the opening team at Ginza Barra. Over time, he rose to become the group’s Executive Chef, leading the opening of two new restaurants—one in Tulum and another in Santa Fe.

Later, he was invited to manage the kitchen and operations at OKU Prado Norte. Finally, Chef Yasuo Asai selected him to oversee the opening and serve as Executive Chef at Tokoya, a renowned sushi restaurant in Polanco, located inside the Presidente InterContinental Mexico City.
